Chocolate Cream Cheese Cupcakes
1 (18.5 oz) box of Chocolate Cake mix
1 (8 oz) package of Cream Cheese (at room temp)
1/2 c. warm water
1/2 c. vegetable oil
4 eggs
2 tsp Vanilla Extract
Optional: 2 (1.55 oz) Chocolate bars shaved
Preheat oven to 350* and line your cupcake pans!
Place cake mix, cream cheese, oil, eggs, water & vanilla in a bowl.
Beat on low for 30 sec, scrape the sides, add chocolate shavings
Mix on medium for 2 minutes.
Fill cupcake cups 3/4 full (about 1/3 cup) (makes 22-24)
Bake until they spring back when lightly pressed on (20-23 min)
Cool for 5 minutes, remove from pan & remove the liners.
Cool for 15 minutes.
Frost with Creamy Chocolate Blender Ganache.

Creamy Chocolate Blender Ganache
1 cup semi-sweet chocolate chips
1/2 cup (4 oz) Evaporated Milk
1/2 tsp Vanilla Extract
Melt chocolate chips, mix all ingredients in the blender.
Let set for 20 mins on the counter so it can thicken.
Frost cupcakes & enjoy!
