Me Myself & I Link Up 3



1) When you're feeling down, what do you do to pick yourself up?
Beauty night. A nice face mask, pedicure & hot bath! 
Always makes me feel better if I feel good about myself. 

2)  If you had to live in a different time period which would you prefer?
I'm not really good with knowing my time periods, 
honestly I have to look them up most of the time
But I love the 50's style!
Love the dresses! Would love to wear dresses more often & not feel strange.
Though I'm sure it'd get old fast!

3)  What is the most creative Halloween costume you've ever worn?
I really wish I had answer for this! So here's a picture of A on Halloween!

4)  Five weird things about you we wouldn't know without being told?
1. I'm allergic to tomatoes, even ketchup makes me itch & feel awful. (People thing it's weird, I don't)
2. I always think situations through fully. (Drives my husband crazy) Like I'll think of every possible outcome just to make sure I know what I'm going to say or how I'll react. Crazy. I know.
3. I have to wear shoes whenever I go downstairs. Seriously the thought of stepping on something or walking by a bug freaks me out.

Why can't I think of anymore? I know I'm weird, just what makes me weird? Ha.

5)  What would you tell your 16-year-old self?
Stop being so darn shy! No one in this state knows you! You can be whoever you want to be!

Conceive Easy

Just about 2 cycles ago, I was lucky enough to get to test out the
 ConceiveEasy TTC Kit.


This is what the kit looks like when you get it! 
I was too excited to open it and see it all the I forgot to take a picture of it! But seriously, that's what it looks like. 

Now if you're TTC & have been for a while, you might be like me. A little crazy with the pregnancy tests. So when I got to my box & noticed how many there were I was thrilled!

But something else was in the box Ovulation tests. I had no idea when to start using them & wish there was just a bit more info in the box for me. I love info & would much rather have a pamphlet full of info then having to turn to the internet for help. But they did have some great info on their site, you can find that here

It also included a BBT, which I've never been great at using, but I gave it a shot!

I love this kit. It had just about everything I needed, (only thing missing- more info.). Though they do have a website all about how to get pregnant &; it was super handy for that. Now I didn't get pregnant while using this kit, BUT I did feel better while I was taking the pills to help you get pregnant.
 It's hard to explain. 

I would definitely recommend this to someone TTC, it doesn't hurt to try something. 
When I was TTC the first time around I went with as much natural stuff I could before going to see a doctor. It's definitely worth giving it a try!

Sunday Social.

Sunday Social

1. 5 items you can't live without on a daily basis(water, food, shelter, and clothes dont count) 
Iphone, something with caffeine in it (cup of coffee/diet coke)
Netflix, mascara & a hair dryer.


2. All time favorite book? Why?
There has really only been one book, that I've read over & over again.

Seriously, love the notebook. Don't know why I've read it so many times, I know the story. Just something about it draws me back over & over again.

3. Something you'd like to accomplish before the end of 2012
I want to read 30 books. I read like 2-3 a week lately but I want to keep it up. I've enjoyed reading so much the last couple months, I don't know why I even stopped.

4. If you could go back and relive any year of your life which year would it be?
2008. I feel like that year was rushed. I'd also love to do my wedding day again.

5. What do you wish people knew about you without you having to tell them?
A lot of people (my in-laws) seem to think that me being quiet & keeping to myself is me being rude.
I'm shy, always have been, though lately I feel I'm growing out of it. Seriously it freaks me out to have to go see someone I don't know that well, or visit people I don't see that often, makes me sick. My in-laws have always thought that me not being super outgoing or loud, or telling them every detail of my life is a bad thing. It's just who I am.

Pretty Physicist!

I love Mexican food, and I love spicy food. These enchiladas are from a recipe that I got from my best friend. Because they're so delish, I want to share the recipe with you. I will preface this by saying that I make 2 kinds - black bean for me and chicken for hubby - but I can make them at the same time with minimal difficulty. You can replace the chicken with any meat you like - ground beef or turkey, steak, etc. It is seriously a "whatever you like" enchilada.


Ingredients:

olive oil

1 chicken breast, chopped (2 if you're making chicken only)

1 can black beans, drained and rinsed (omit if making chicken only)

1 large can enchilada sauce

1 small onion, chopped

2 chipotles in adobo, diced

1 can diced tomatoes with jalapenos, drained

1 small can corn, drained (or 1 cup frozen corn, thawed)

1 small can diced chiles, drained

chili powder (to taste)

cayenne pepper (to taste)

crushed red pepper flakes (to taste)

12 tortilla shells (flour or corn - both work equally well)

shredded cheese



Directions:

1. Saute chicken in olive oil until cooked. Remove from pan, saute onion in same pan until soft and translucent

2. Add chipotles, diced tomatoes, corn, chiles, and spices and cook until heated through.

3. At this point, if you're me, you split the veggie mixture into two frying pans, add the chicken to one and the black beans to the other. If you're making all meat, just add the meat into the veggie mixture.

4. Spread a little enchilada sauce on the bottom of the baking dishes, put the rest in an empty pie plate.

5. Dip the tortillas (both sides) in the sauce, fill with approximately 1/2c of the mixture, roll up, and line up in baking dish. If there is any extra filling, I just put it around the enchiladas in the dish. Dipping the tortillas in the sauce keeps the tortillas from drying out and really helps distribute the flavors.

6. Sprinkle the tops of the enchiladas with shredded cheese and bake at 350F for approximately 20 minutes or until heated through and the cheese is melted.



This recipe makes 12 enchiladas - enough for hubby and I to both eat a good dinner and have left overs for lunch the next day!
